The other night I had what was possibly the best chicken I'd ever tasted, and it was all due to one of Lawry's newest marinades: the Herb & White Wine marinade!
     I was so happy when I got the box from BzzAgent that included the two newest Lawry's Marinades, the great Lawry's Seasoning Salt, and even a neat bright red Lawry's grilling apron.
     I decided to try the Herb & White Wine Marinade first since chicken is more in my budget right now, and I was in the mood for something milder. The "recipe" was simple: Marinate the chicken thighs (skin on this time) in the marinade in a bowl in the fridge until soaked in. Then bake on a cookie sheet for the appropriate minutes depending on your oven and quantity/thickness of your chicken pieces. Just make sure when you think they are done to cut into the thickest part: if the juices are clear and not pink or red, then it is done.
     Yes, the marinade bubbled up and somewhat blackened a little bit pretty quickly. But that didn't affect the quality of the chicken negatively at all. 
     Quite the opposite:
     The result was chicken that tasted so yummy, with skin so crispy and delicious! The chicken itself was moist and tender and mouth-watering from the marinade soaking into it. It was perfect as is, with some rice pilaf. It had a Meditarranean feel.
     It looked and smelled so delicious I dug right in. I even forgot to take a photo for you all, sorry! But you've seen baked chicken before, lol. :)
     I think the marinated cooked chicken would also be great cut up and placed on top of a pizza with a white sauce and maybe marinated artichoke hearts. Yum! Consider some feta cheese along with the mozzarella on top, wow!
     The cookie sheet got really messy, which of course would not be a problem on the grill. But if you are baking in the oven, if you want to put the chicken on top of foil you can throw away after cooking, or bake in a big baking dish like corningware (which I don't have and can't afford right now hence the cookie sheet) you will probably save yourself from some time oven cleaning and heavy dish washing later.

Santa Fe Chicken with Corn Salsa  
1/2 cup Lawry's® Santa Fe Chile with Lime and Garlic Marinade
1/2 cup chopped fresh cilantro
1/4 cup orange juice
1 1/2 lbs. boneless skinless chicken breast halves
1 can (15 oz.) whole kernel corn, well drained
1 large tomato, chopped
1/2 cup chopped green bell pepper
1/4 cup chopped red onion  
MIX Marinade, cilantro and orange juice. Place chicken in glass dish. Add 1/2 cup of the marinade mixture; turn to coat well. Refrigerate 30 minutes.
TOSS corn, tomato, bell pepper and onion with 1/4 cup of the remaining marinade mixture. Set aside. Remove chicken from marinade. Discard marinade.
GRILL chicken over medium heat 6 to 7 minutes per side or until cooked through, brushing with remaining marinade mixture. Serve with Corn Salsa.
